Ingredients

1 cup balsamic vinegar

1/2 cup extra virgin olive oil

2 tablespoons honey or maple syrup

2 cloves garlic, minced

1 teaspoon Dijon mustard

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 teaspoon salt (to taste)

1/4 teaspoon black pepper

1 tablespoon fresh parsley, chopped (for garnish)

1 tablespoon fresh basil, chopped (for garnish)

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C).

Roast Garlic: Peel and slice the garlic cloves in half. Wrap them in aluminum foil with a drizzle of olive oil. Roast in the preheated oven for about 20-25 minutes until soft and fragrant.

Mix Ingredients: After roasting, let the garlic cool slightly before squeezing the soft cloves into a mixing bowl. Add balsamic vinegar, honey (or maple syrup), Dijon mustard, dried oregano, dried thyme, salt, and black pepper to the bowl.

Blend: Whisk together until well combined. Slowly drizzle in the extra virgin olive oil while whisking continuously to emulsify the dressing.

Adjust Seasoning: Taste your vinaigrette and adjust seasoning if needed. For a bit more sweetness, add a touch more honey or maple syrup, and for tanginess, increase the balsamic vinegar.

Add Fresh Herbs: Stir in chopped fresh parsley and basil right before serving, or keep them separate to sprinkle over salads for a fresh touch.

Serve: Drizzle over your favorite salads, roasted vegetables, or use as a marinade for grilled meats or tofu.
