Roasted Broccoli & Cheddar Quinoa Bake

1 cup quinoa, rinsed

2 cups vegetable broth (or water)

2 cups broccoli florets, fresh or frozen

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1 cup sharp cheddar cheese, shredded (plus more for topping)

1/2 cup milk (dairy or plant-based)

2 large eggs

1/4 cup grated Parmesan cheese

1/4 teaspoon red pepper flakes (optional for heat)

Fresh parsley or chives for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid has been absorbed. Remove from heat and set aside.

      Roast the Broccoli: On a baking sheet, toss the broccoli florets with olive oil, salt, pepper, garlic powder, onion powder, and paprika. Spread them evenly and roast in the preheated oven for about 15-20 minutes, or until tender and slightly caramelized, stirring halfway through.

        Prepare the Cheese Mixture: In a large mixing bowl, whisk together the milk, eggs, red pepper flakes (if using), and grated Parmesan cheese. Stir in the cooked quinoa and roasted broccoli, followed by the cheddar cheese. Mix until well combined.
