Roasted Brussels Sprouts with Balsamic Glaze

1 lb Brussels sprouts, trimmed and halved

3 tablespoons olive oil

1 teaspoon garlic powder

½ teaspoon sea salt

¼ teaspoon black pepper

⅓ cup balsamic vinegar

2 tablespoons honey or maple syrup

¼ cup grated Parmesan cheese (optional)

Fresh thyme leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Brussels Sprouts: Rinse the Brussels sprouts under cold water and pat them dry. Trim the ends and cut them in half for even roasting.

      Seasoning: In a large mixing bowl, combine the Brussels sprouts with olive oil, garlic powder, sea salt, and black pepper. Toss them until they're evenly coated.

        Roasting: Spread the seasoned Brussels sprouts on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until they are golden brown and crispy, shaking the pan halfway through for even cooking.

          Make the Balsamic Glaze: While the sprouts are roasting, combine the balsamic vinegar and honey (or maple syrup) in a small saucepan. Bring to a boil over medium heat, then reduce the heat and let it simmer for 5-7 minutes, or until it has thickened slightly. Remove from heat and let it cool—it will continue to thicken.

            Combine and Serve: Once the Brussels sprouts are done roasting, drizzle them with the balsamic glaze and toss gently to combine. If desired, sprinkle with grated Parmesan cheese and fresh thyme leaves for an extra touch of flavor.
