Roasted Garlic White Bean Toast

1 large head of garlic

1 can (15 oz) of white beans (such as cannellini or navy beans), drained and rinsed

2 tablespoons extra virgin olive oil, plus more for drizzling

1 tablespoon fresh lemon juice

1 teaspoon fresh rosemary, finely chopped (or ½ teaspoon dried rosemary)

Salt and freshly ground black pepper, to taste

4 slices of crusty whole grain bread

Optional toppings: baby arugula, microgreens, red pepper flakes, or shaved parmesan

Instructions
 

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Slice the top off the head of garlic to expose the cloves. Drizzle with a little olive oil and wrap it in aluminum foil. Roast in the oven for about 30-35 minutes until the cloves are soft and golden brown. Allow to cool.

        Prepare the White Bean Mixture:

          - In a bowl, combine the drained white beans, 2 tablespoons of olive oil, lemon juice, rosemary, and the roasted garlic cloves (squeezed out of their skins).

            - Mash the mixture with a fork or potato masher until it reaches your desired consistency—smooth or chunky.

              - Season with salt and freshly ground black pepper to taste.

                Toast the Bread:

                  - While the white bean mixture sits for a moment, toast the slices of bread in a toaster or on a grill until they are golden and crispy.

                    Assemble the Toast:

                      - Spread a generous amount of the white bean mixture over each toasted slice of bread. Drizzle with a bit more olive oil for added richness.

                        Add Optional Toppings:

                          - If desired, top with baby arugula, microgreens for freshness, a sprinkle of red pepper flakes for a kick, or shaved parmesan for a savory finish.

                            Serve:
