Roasted Peach and Burrata Salad

4 ripe peaches, halved and pitted

8 ounces burrata cheese

4 cups mixed greens (arugula, spinach, and frisée work well)

1/4 cup toasted walnuts or pecans

1/4 cup thinly sliced red onion

1/4 cup fresh basil leaves, torn

3 tablespoons extra virgin olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey

Salt and freshly cracked black pepper, to taste

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Peaches: Place the halved peaches on a baking sheet, cut side up. Drizzle with 1 tablespoon of olive oil and sprinkle with a pinch of salt. Roast in the preheated oven for about 15-20 minutes, or until the peaches are tender and caramelized. Remove from the oven and let cool slightly.

      Make the Dressing: In a small bowl, whisk together the remaining 2 tablespoons of olive oil, balsamic vinegar, honey, salt, and pepper until well combined. Adjust seasoning to taste.
