Roasted Salmon and Broccoli

Ingredients
  

4 salmon fillets (about 6 oz each)

2 cups broccoli florets

3 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon lemon zest

1 tablespoon fresh lemon juice

1 tablespoon Dijon mustard

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper, to taste

Lemon wedges, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Broccoli: In a large bowl, toss the broccoli florets with 2 tablespoons of olive oil, salt, and pepper. Spread the broccoli evenly on a baking sheet.

      Make the Marinade: In a small bowl, combine the remaining 1 tablespoon of olive oil, minced garlic, lemon zest, lemon juice, Dijon mustard, thyme, salt, and pepper. Mix well.

        Prepare the Salmon: Place the salmon fillets on the baking sheet alongside the broccoli. Brush each salmon fillet generously with the herb marinade.

          Roast the Dish: Roast in the preheated oven for about 15-18 minutes, or until the salmon is cooked through and flakes easily with a fork, and the broccoli is tender with slight caramelization.

            Serve: Remove from the oven and serve immediately with lemon wedges on the side for an extra zing.
