Ingredients

4 cups all-purpose flour

2 teaspoons instant yeast

1 teaspoon sugar

1 teaspoon salt

1 cup warm water (about 110°F/43°C)

2 tablespoons olive oil

3 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped (or 1 tablespoon dried)

1 egg (for egg wash)

Sea salt (for sprinkling)

Instructions

Activate the Yeast: In a small bowl, mix the warm water, sugar, and instant yeast. Let it sit for about 5-10 minutes, until frothy.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour and salt. Create a well in the center.

Combine Wet Ingredients: In a separate bowl, mix the activated yeast mixture with olive oil, minced garlic, and rosemary.

Form the Dough: Pour the wet mixture into the well of the dry ingredients. Using a spatula or your hands, mix until a rough dough begins to form.

Knead the Dough: Transfer the dough to a floured surface and knead for about 8-10 minutes, until smooth and elastic. If the dough feels too sticky, sprinkle a bit more flour as needed.

First Rise: Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours or until it has doubled in size.

Shape the Rolls: Once risen, punch down the dough and divide it into 12 equal pieces. Shape each piece into a smooth ball and place them in a greased baking dish (9x13” works well).

Second Rise: Cover the dish with the towel again and let the rolls rise for another 30-45 minutes, until they puff up.

Preheat the Oven: While the rolls are rising, preheat your oven to 375°F (190°C).

Egg Wash: Beat the egg in a small bowl and brush it over the tops of the rolls. Sprinkle a touch of sea salt on top for added flavor.

Bake: Place the rolls in the preheated oven and bake for 20-25 minutes, or until golden brown on top.

Cool and Serve: Once baked, remove the rolls from the oven and allow them to cool in the pan for about 5-10 minutes. Serve warm, ideally with herbed butter or olive oil for dipping.
