2 cups all-purpose flour

1 tablespoon fresh rosemary, finely chopped (plus extra for topping)

2 teaspoons baking powder

1 teaspoon sea salt

½ teaspoon baking soda

1 cup whole milk

¼ cup extra-virgin olive oil (plus extra for drizzling)

2 large cloves garlic, minced

1 tablespoon honey

Coarse sea salt, for sprinkling on top

Optional: grated Parmesan cheese for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin with olive oil or line with muffin liners for easy removal.

    Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, chopped rosemary, baking powder, sea salt, and baking soda. Whisk them together until well combined.

      Prepare Wet Mixture: In a separate bowl, mix the whole milk, olive oil, minced garlic, and honey. Stir well until the ingredients are fully integrated.

        Combine Mixtures: Pour the wet mixture into the dry ingredients. Using a wooden spatula or a large spoon, gently fold the mixture together until just combined. Do not overmix; some lumps are fine.

          Fill Muffin Tins: Evenly distribute the batter into the prepared muffin tin, filling each cup about ¾ full.

            Add Toppings: Drizzle a little extra olive oil over the tops of the muffins. Sprinkle with additional chopped rosemary, coarse sea salt, and if desired, a sprinkle of grated Parmesan cheese.

              Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the tops are golden brown and a toothpick inserted in the center of one of the muffins comes out clean.

                Cool and Serve: Once baked, allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature.
