Salmon Tacos with Mango Slaw

For the Salmon:

1 lb fresh salmon fillets, skin removed

2 tablespoons olive oil

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon salt

¼ teaspoon black pepper

Juice of 1 lime

For the Mango Slaw:

1 cup green cabbage, thinly sliced

1 cup red cabbage, thinly sliced

1 ripe mango, diced

½ red bell pepper, thinly sliced

¼ cup fresh cilantro, chopped

2 tablespoons lime juice

1 tablespoon honey or agave syrup

Salt and pepper, to taste

For Serving:

8 small corn or flour tortillas

Lime wedges

Extra fresh cilantro for garnish

Prepare the Marinade: In a small bowl, combine olive oil, cumin, smoked paprika, garlic powder, salt, black pepper, and lime juice. Mix well until evenly blended.

    Marinate the Salmon: Place the salmon fillets in a dish and pour the marinade over them, ensuring they are thoroughly coated. Let them marinate in the refrigerator for at least 30 minutes.

      Make the Mango Slaw: In a large bowl, combine the green cabbage, red cabbage, diced mango, red bell pepper, and cilantro. In a small bowl, whisk together the lime juice, honey, salt, and pepper. Pour this dressing over the slaw and toss gently until well combined. Set aside to allow the flavors to meld.

        Cook the Salmon: Preheat a grill or skillet over medium-high heat. Remove the salmon from the marinade and place it on the grill or skillet. Cook for about 4-5 minutes on each side or until the salmon is cooked through and easily flakes with a fork.

          Warm the Tortillas: While the salmon is cooking, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side until they are pliable and slightly toasted.

            Assemble the Tacos: Flake the cooked salmon into bite-sized pieces and divide it evenly among the warmed tortillas. Top each taco generously with the mango slaw.
