Salted Caramel Chocolate Cookie Recipe

Ingredients
  

For the Cookies:

1 cup (226g) unsalted butter, softened

1 cup (200g) brown sugar, packed

1/2 cup (100g) granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 1/2 cups (315g) all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup (170g) semi-sweet chocolate chips

For the Salted Caramel:

1 cup (200g) granulated sugar

6 tablespoons (85g) unsalted butter, chopped into pieces

1/2 cup (120ml) heavy cream

1 teaspoon sea salt (or to taste)

Instructions
 

Make the Salted Caramel:

    - In a medium saucepan over medium heat, add the granulated sugar. Stir constantly with a wooden spoon until the sugar melts and turns a deep amber color, about 8-10 minutes. Be cautious not to burn it.

      - Carefully add the chopped butter to the melted sugar, stirring until fully melted and combined.

        - Slowly pour in the heavy cream (the mixture will bubble up), stirring continuously until the sauce is smooth.

          - Remove from heat and stir in the sea salt. Allow the caramel to cool while you prepare the cookie dough.

            Prepare the Cookie Dough:

              - In a large mixing bowl, beat together the softened butter, brown sugar, and granulated sugar until light and fluffy.

                - Add the eggs, one at a time, mixing well after each addition. Then mix in the vanilla extract.

                  - In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

                    - Fold in the semi-sweet chocolate chips.

                      Assemble the Cookies:

                        - Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

                          - Using a cookie scoop or tablespoon, drop cookie dough onto the prepared baking sheets, leaving space between each cookie (they will spread).

                            - Make a small indent in the center of each dough ball and fill it with about 1 teaspoon of the cooled salted caramel. Cover the caramel with a bit of extra cookie dough if desired.

                              - Sprinkle a pinch of sea salt on top of each cookie.

                                Bake:

                                  - Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are lightly golden and the centers are set but still soft.

                                    - Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to wire racks to cool completely.

                                      Serve:

                                        - Enjoy these decadent cookies warm with a glass of milk, or let them cool completely and store them in an airtight container for up to a week.
