Ingredients

8 slices of white or whole wheat bread

4 breakfast sausages, cooked and crumbled

4 large eggs

1/2 cup milk

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 tablespoon sugar (optional, adjust to taste)

2 tablespoons butter (for frying)

Powdered sugar, for dusting

Maple syrup, for serving

Instructions

Flatten the Bread: Using a rolling pin, gently flatten each slice of bread until it is about 1/4 inch thick. This will make it easier to roll up.

Prepare the Filling: In a mixing bowl, combine the crumbled sausage. If you like some extra flavor, you can add a pinch of salt and pepper. Set aside.

Make the Custard: In another bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and sugar until well-combined.

Assemble the Roll-Ups: Take a flattened slice of bread and place 1-2 tablespoons of the sausage filling at one end. Roll the bread tightly around the filling, ensuring it stays securely closed. Repeat with the remaining slices.

Heat the Pan: In a large skillet, melt 1 tablespoon of butter over medium heat.

Dip and Cook: Dip each roll-up in the egg mixture, ensuring they are well-coated. Place the rolls seam-side down in the skillet. Cook for 2-3 minutes on each side until golden brown and crispy. You may need to add more butter for the second batch.

Dust & Serve: Once cooked, remove the roll-ups from the skillet and place them on a paper towel-lined plate to absorb any excess oil. Dust with powdered sugar before serving and drizzle with maple syrup.

Enjoy: Serve warm and enjoy the delightful combination of sweet and savory flavors!
