Ingredients

2 cups green cabbage, finely shredded

1 medium onion, finely chopped

1 cup all-purpose flour

2 large eggs

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1/4 cup fresh parsley, chopped

1 tsp garlic powder

1/2 tsp smoked paprika

Salt and pepper to taste

Olive oil for frying

Instructions

Prep the Cabbage: In a large bowl, add the finely shredded cabbage and sprinkle it with salt. Allow it to sit for about 10 minutes to draw out moisture. After 10 minutes, squeeze the cabbage with your hands to remove excess water and transfer it to a clean bowl.

Mix Ingredients: Add the chopped onion, flour, eggs, Parmesan cheese, parsley, garlic powder, smoked paprika, salt, and pepper to the bowl with the cabbage. Mix everything until well combined; the mixture should be somewhat thick but cohesive.

Heat Oil: In a large skillet, heat about 1/4 inch of olive oil over medium heat until shimmering. You can test if it's ready by dropping a small spoonful of the batter into the oil; it should sizzle.

Fry Fritters: Using a spoon or small ice cream scoop, drop spoonfuls of the cabbage mixture into the hot oil, flattening them slightly with the back of the spoon. Do not overcrowd the pan; you may need to work in batches. Cook for about 3-4 minutes on each side until golden brown and crispy.

Drain: Once cooked, transfer the fritters to a paper towel-lined plate to absorb excess oil.

Serve: Enjoy the fritters warm with a side of sour cream, yogurt, or a homemade dipping sauce of your choice.
