Savory Cheddar Broccoli and Rice Casserole

1 cup uncooked long-grain white rice

2 cups vegetable broth

2 cups fresh broccoli florets (or frozen, thawed and drained)

1 cup sharp cheddar cheese, shredded

1 cup milk

1/2 cup sour cream

1 small onion, chopped

2 cloves garlic, minced

1 teaspoon Dijon mustard

1 teaspoon paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

1 cup breadcrumbs (optional, for topping)

2 tablespoons olive oil

1/2 cup grated Parmesan cheese (optional, for topping)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook Rice: In a medium saucepan, bring vegetable broth to a boil. Add the uncooked rice, reduce heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and liquid is absorbed. Remove from heat.

      Prepare Broccoli: If using fresh broccoli, steam the florets for 4-5 minutes until bright green and tender-crisp. If using frozen, ensure they are thawed and drained of excess water.

        Sauté Vegetables: In a skillet over medium heat, heat olive oil. Add chopped onion and sauté for about 3-4 minutes until translucent. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.

          Combine Ingredients: In a large mixing bowl, combine the cooked rice, sautéed onion and garlic mixture, steamed broccoli, shredded cheddar cheese, milk, sour cream, Dijon mustard, paprika, black pepper, and salt. Mix well until all ingredients are thoroughly combined.

            Transfer to Baking Dish: Grease a 9x13 inch (or similar size) baking dish and pour in the rice and broccoli mixture. Spread evenly.

              Add Topping: If desired, sprinkle breadcrumbs evenly on top for a crunchy crust. For extra flavor, add grated Parmesan cheese over the breadcrumbs.

                Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 25-30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the topping is golden brown and the casserole is heated through.
