4 boneless, skinless chicken breasts

2 cups baby potatoes, halved

2 cups broccoli florets

1 cup bell peppers, sliced (any color)

½ cup red onion, sliced

4 cloves garlic, minced

3 tablespoons olive oil

2 teaspoons dried Italian herbs (oregano, basil, thyme)

1 teaspoon paprika

Salt and pepper to taste

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chicken: Pat the chicken breasts dry with paper towels and season both sides with salt, pepper, paprika, and half of the Italian herbs.
