1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or yellow), chopped

1 cup zucchini, sliced

1 cup cherry tomatoes, halved

1 cup spinach leaves

1 teaspoon dried oregano

1 teaspoon smoked paprika

½ teaspoon cumin

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: grated Parmesan cheese for serving

Sauté the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken pieces, season with salt and pepper, and cook until browned on all sides, about 5-7 minutes. Ensure the chicken is cooked through; it should have an internal temperature of 165°F (74°C). Remove the chicken from the skillet and set aside.

    Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and sauté for 2-3 minutes until it becomes translucent. Stir in the minced garlic, and cook for another minute until fragrant.

      Add Peppers and Zucchini: Add the chopped bell pepper and zucchini to the skillet. Sauté for about 5 minutes, until the vegetables are tender but still crisp.

        Incorporate Spinach and Tomatoes: Add the halved cherry tomatoes and spinach leaves. Stir well and cook for an additional 2-3 minutes until the spinach wilts and the tomatoes soften.

          Re-combine Chicken: Return the browned chicken to the skillet. Sprinkle in the dried oregano, smoked paprika, cumin, and adjust seasoning with salt and pepper. Stir to combine all the ingredients thoroughly and heat through for another 2-3 minutes.
