Ingredients

1 lb (450g) boneless, skinless chicken breast, thinly sliced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup broccoli florets

1 medium carrot, julienned

2 green onions, chopped

3 cloves garlic, minced

1 teaspoon fresh ginger, minced

1 tablespoon cornstarch

1/4 cup chicken broth

Salt and pepper to taste

Cooked jasmine rice or noodles for serving

Instructions

Marinate the Chicken: In a medium bowl, combine the sliced chicken, soy sauce, oyster sauce, and sesame oil. Allow it to marinate for at least 15 minutes to absorb the flavors.

Prepare the Sauce: In a small bowl, whisk together the cornstarch and chicken broth until smooth. Set aside.

Heat the Pan: In a large non-stick skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.

Stir-Fry the Chicken: Add the marinated chicken to the pan. Stir-fry for about 5-7 minutes, or until the chicken is golden brown and cooked through.

Add Vegetables: Toss in the sliced bell peppers, broccoli florets, and julienned carrot. Stir-fry for an additional 3-5 minutes until the vegetables are tender-crisp.

Thicken the Sauce: Pour the chicken broth mixture into the pan, stirring constantly. Cook for another 2-3 minutes, allowing the sauce to thicken and coat the chicken and vegetables evenly.

Final Touch: Add the chopped green onions and season with salt and pepper to taste. Give it one last stir to combine.

Serve: Serve hot over a bed of jasmine rice or noodles, garnished with additional green onions if desired.
