Savory Chicken Quesadillas with Avocado Salsa

For the Quesadillas:

2 cups cooked chicken, shredded or diced

1 cup shredded Mexican blend cheese (or your favorite cheese)

1 small onion, finely chopped

1 bell pepper, finely chopped (any color)

1 tsp garlic powder

1 tsp cumin

1 tsp smoked paprika

½ tsp chili powder (optional for heat)

4 large flour tortillas

2 tbsp olive oil (for frying)

Salt and pepper to taste

For the Avocado Salsa:

2 ripe avocados, diced

1 cup cherry tomatoes, halved

½ cup red onion, finely chopped

1 jalapeño, seeded and minced (optional for heat)

Juice of 2 limes

¼ cup fresh cilantro, chopped

Salt to taste

Instructions
 

Prepare the Chicken Filling: In a mixing bowl, combine the shredded chicken, diced onion, bell pepper, garlic powder, cumin, smoked paprika, chili powder (if using), salt, and pepper. Mix well until everything is evenly coated.

    Make the Avocado Salsa: In another bowl, combine the diced avocados, cherry tomatoes, red onion, jalapeño, lime juice, cilantro, and a pinch of salt. Gently toss to combine, taking care not to mash the avocados. Set aside.

      Assemble the Quesadillas: Heat a non-stick skillet over medium heat. Place one tortilla in the skillet and sprinkle half of the cheese evenly over the surface. Then layer half of the chicken mixture on top. Sprinkle the remaining cheese over the chicken, and top with another tortilla.

        Cook the Quesadillas: Add 1 tbsp of olive oil to the skillet. Cook for about 3-4 minutes or until the bottom tortilla is golden brown and crispy. Carefully flip the quesadilla using a spatula, and add the remaining olive oil. Cook for an additional 3-4 minutes until the second side is golden and the cheese has melted.

          Repeat the Process: Remove the cooked quesadilla from the skillet and let it rest for a minute before cutting it into wedges. Repeat the assembly and cooking steps for the second quesadilla.

            Serve: Arrange the quesadilla wedges on a plate and serve warm with the fresh avocado salsa on the side for dipping. Enjoy your crispy, cheesy, and savory chicken quesadillas!
