Ingredients

1 lb ground turkey

1 cup fresh spinach, finely chopped

1/2 cup feta cheese, crumbled

1/4 cup red onion, finely chopped

2 cloves garlic, minced

1 large egg, lightly beaten

1/2 cup breadcrumbs (preferably whole wheat)

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil (for cooking)

Optional: Tzatziki sauce for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

Mix the Ingredients: In a large bowl, combine the ground turkey, chopped spinach, feta cheese, red onion, minced garlic, beaten egg, breadcrumbs, dill, oregano, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.

Form the Meatballs: With clean hands, take about 2 tablespoons of the mixture and roll it into a ball. Place it on the prepared baking sheet. Repeat this process until all the mixture is formed into meatballs, spacing them about an inch apart.

Cook the Meatballs: Drizzle the olive oil over the meatballs. Bake in the preheated oven for 20-25 minutes, or until the meatballs are golden brown and fully cooked (the internal temperature should reach 165°F or 74°C).

Serve: Once cooked, remove the meatballs from the oven and let them cool slightly. Serve warm with tzatziki sauce for dipping, and enjoy as an appetizer or with a side of quinoa or a Greek salad.
