1 package (17.3 oz) frozen puff pastry sheets, thawed

1 cup diced cooked ham

1 cup shredded Swiss cheese

1/4 cup cream cheese, softened

1 tablespoon Dijon mustard

1 tablespoon fresh chives, finely chopped (optional)

1 egg, beaten (for egg wash)

Salt and pepper to taste

Sesame seeds (for garnish, optional)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Puff Pastry: Roll out the thawed puff pastry sheets on a lightly floured surface. Cut each sheet into 3-inch squares, yielding about 12 squares per sheet.

      Make the Filling: In a medium bowl, combine the diced ham, shredded Swiss cheese, cream cheese, Dijon mustard, and chives if using. Mix until well combined. Season with salt and pepper to taste.

        Assemble the Bites: Place a tablespoon of the ham and cheese mixture in the center of each puff pastry square. Be careful not to overfill, as you need to fold the pastry.

          Fold the Pastry: Carefully fold the corners of each square toward the center to create a pocket or triangle shape. Press the edges to seal tightly.

            Brush with Egg Wash: Place the formed puff pastry bites on the prepared baking sheet. Brush the tops with beaten egg and sprinkle with sesame seeds if desired.
