2 cups cooked jasmine rice (preferably day-old)

1 lb ground beef

1 large onion, diced

3 cloves garlic, minced

1 cup mixed vegetables (peas, carrots, and corn)

3 green onions, sliced (white and green parts separated)

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon sesame oil

1 teaspoon ginger, grated

2 tablespoons vegetable oil (for frying)

Salt and pepper to taste

Optional: fried egg for topping

Prepare the Beef: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the ground beef and season it with salt and pepper. Cook until browned and no longer pink, about 5-7 minutes. Drain any excess fat, and then push the beef to one side of the skillet.

    Sauté the Onions and Garlic: In the same skillet, add another tablespoon of vegetable oil. Add the diced onion and cook until translucent, about 3 minutes. Then add the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.

      Combine Ingredients: Stir the cooked ground beef back into the skillet with the onions and garlic. Add the mixed vegetables and sauté everything together for another 2-3 minutes until the vegetables are heated through.

        Add the Rice: Push the beef and vegetable mixture to one side of the skillet. Add the jasmine rice to the empty side and break apart any clumps with a spatula. Mix everything together, ensuring the rice is combined well with the meat and vegetables.

          Season and Flavor: Pour the soy sauce, oyster sauce, and sesame oil over the rice, mixing thoroughly to ensure even distribution of flavors. Stir in the white parts of the green onions, reserving the green tops for garnish. Adjust salt and pepper to taste.

            Finish Up: Cook for an additional 2-3 minutes, allowing the flavors to meld and the rice to get crispy at the bottom if desired. Remove from heat.
