Savory Onion Beef Fried Rice

2 cups cooked jasmine rice (day-old is best)

1 lb flank steak, thinly sliced

1 medium yellow onion, finely chopped

3 green onions, chopped (white and green parts separated)

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon sesame oil

1 teaspoon ground black pepper

2 large eggs, beaten

2 tablespoons vegetable oil

Optional: 1/2 cup frozen peas and carrots mix

Instructions
 

Marinate the Beef: In a medium bowl, combine the sliced flank steak with soy sauce, oyster sauce, and ground black pepper. Allow to marinate for at least 15 minutes while you prepare other ingredients.

    Cook the Beef: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated beef in a single layer. Cook for about 2-3 minutes on each side until browned and cooked through. Remove from the pan and set aside.

      Sauté the Vegetables: In the same skillet, add another tablespoon of vegetable oil. Add chopped onion and the white parts of the green onions. Sauté for 2-3 minutes until the onions are translucent. Add minced garlic and stir for about 30 seconds until fragrant.

        Add Rice and Eggs: Push the onion mixture to one side of the skillet. Pour the beaten eggs into the pan, scrambling them on the other side until fully cooked. Then, add the cooked jasmine rice, mixing everything together.

          Incorporate the Beef: Return the cooked beef back to the skillet along with the optional peas and carrots. Drizzle sesame oil over the mixture and stir-fry everything together for another 3-4 minutes to heat through and combine flavors.

            Finish and Serve: Taste the fried rice and adjust seasoning if necessary. Garnish with the green parts of the chopped green onions before serving.
