1 wheel of Brie cheese (about 8 ounces)

1 cup unsalted shelled pistachios, finely chopped

1/2 cup plain breadcrumbs

1/4 cup honey

2 tablespoons olive oil

1 teaspoon sea salt

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

1/2 teaspoon black pepper

Fresh thyme leaves (for garnish)

Baguette slices or crackers (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C), allowing it to reach the ideal temperature for a perfectly melted Brie.

    Prepare the Brie: Carefully slice the Brie wheel in half horizontally to create two thinner rounds. Place one half on a baking sheet lined with parchment paper and set aside the other half.

      Make the Crust Mixture: In a medium bowl, combine the finely chopped pistachios, breadcrumbs, sea salt, fresh rosemary, and black pepper. Drizzle in the olive oil and mix until the ingredients are well-coated and crumbly.

        Assemble the Bites: Spread half of the honey on the Brie layer on the baking sheet. Then, sprinkle a generous amount of the pistachio mixture over the honeyed Brie, pressing it down gently to adhere. Repeat the process with the second half of the Brie, adding additional honey and more pistachios on top.

          Bake: Place the baking sheet in the preheated oven and bake for about 15-20 minutes, or until the Brie is thoroughly melted and the pistachio crust is golden brown.
