12 large jumbo pasta shells

1 tablespoon olive oil

1 pound Italian sausage (casings removed)

4 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese, plus additional for topping

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

3 cups marinara sauce

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta Shells: In a large pot, bring salted water to a boil. Add the jumbo pasta shells and cook according to package instructions until al dente. Drain the shells and rinse them under cold water to stop the cooking process. Set aside.

      Prepare the Filling: In a large skillet, heat the olive oil over medium heat. Add the sausage and cook until browned, breaking it apart as it cooks (about 5-7 minutes). Add the minced garlic, cook for another minute, then add the chopped spinach. Cook until the spinach wilts (about 3 minutes).

        Mix the Cheese Filling: In a large bowl, combine the cooked sausage mixture with ricotta cheese, shredded mozzarella, Parmesan cheese, egg, dried oregano, red pepper flakes (if using), and season with salt and pepper. Mix until well combined.

          Assemble the Dish: Spread a thin layer of marinara sauce (about 1 cup) over the bottom of a 9x13 inch baking dish. Carefully stuff each jumbo shell with the sausage and spinach filling, placing them seam side up in the baking dish. Pour the remaining marinara sauce over the stuffed shells. Sprinkle extra mozzarella cheese on top.
