1 lb (450g) Italian sausage (mild or spicy, based on preference)

2 cups baby potatoes, halved

1 cup bell peppers (mixed colors), sliced

1 cup red onion, cut into wedges

2 cups broccoli florets

3 cloves garlic, minced

4 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Vegetables: In a large mixing bowl, combine the halved baby potatoes, sliced bell peppers, red onion wedges, and broccoli florets.

      Season the Veggies: Add the minced garlic, olive oil, smoked paprika, oregano, thyme, salt, and pepper to the bowl. Toss the vegetables until they are evenly coated with the seasonings and oil.

        Prepare the Sausage: Slice the Italian sausage into 1-inch pieces. You can also leave them whole if you prefer.

          Combine on the Sheet Pan: On a large, rimmed baking sheet, spread the seasoned vegetables out evenly. Scatter the sausage pieces over the top.

            Roast: Place the sheet pan in the preheated oven and roast for about 25-30 minutes, or until the sausages are cooked through and the vegetables are tender and browned, stirring halfway through to ensure even cooking.

              Serve: Once finished, remove the pan from the oven. Garnish with freshly chopped parsley before serving for a pop of color and freshness.
