20 large jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

3 cups marinara sauce

Fresh basil or parsley for garnish

Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish with a little olive oil or cooking spray.

    Cook the pasta shells in boiling salted water for about 9-11 minutes until al dente. Drain and set aside to cool slightly.

      Sauté the spinach: In a large skillet, heat a splash of olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 30 seconds. Then add the chopped spinach and cook until just wilted, about 2-3 minutes. Remove from heat and let it cool.

        Prepare the filling: In a large mixing bowl, combine the cooked spinach, ricotta cheese, half of the mozzarella cheese, Parmesan cheese, egg, salt, and pepper. Mix well until all ingredients are fully incorporated.

          Stuff the shells: Take each cooked jumbo shell and spoon in about 1-2 tablespoons of the spinach and cheese filling. Place each filled shell upright in the prepared baking dish.

            Add marinara sauce: Once all shells are in the dish, pour the marinara sauce evenly over the top, ensuring each shell is covered. Sprinkle the remaining mozzarella cheese on top.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
