Ingredients

1 pre-made pie crust (9-inch)

1 cup sun-dried tomatoes, chopped (oil-packed for enhanced flavor)

1 cup fresh spinach, roughly chopped

1 cup shredded mozzarella cheese

½ cup crumbled feta cheese

4 large eggs

1 cup heavy cream

1 teaspoon dried basil

1 teaspoon garlic powder

Salt and pepper to taste

Optional: Fresh basil leaves for garnish

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Crust: Place the pie crust in a 9-inch pie dish. If using a pre-made crust, follow the baking instructions to partially bake it for about 10 minutes until lightly golden. Remove from the oven and let it cool slightly.

Sauté the Spinach: In a skillet over medium heat, add the chopped spinach and sauté for about 2-3 minutes until wilted. Remove from heat and let cool.

Mix the Filling: In a large mixing bowl, whisk together the eggs and heavy cream until well combined. Stir in the dried basil, garlic powder, salt, and pepper. Mix in the chopped sun-dried tomatoes, sautéed spinach, mozzarella cheese, and feta cheese until everything is evenly distributed.

Assemble the Quiche: Pour the filling mixture into the cooled pie crust, spreading it evenly.

Bake: Place the quiche in the preheated oven and bake for 35-40 minutes, or until the filling is set and the top is lightly golden.

Cool and Serve: Once baked, remove from the oven and let it sit for at least 10 minutes to firm up. Garnish with fresh basil leaves if desired, slice, and serve warm or at room temperature.
