2 pounds fresh figs, stems trimmed and quartered

1 cup granulated sugar

1/2 cup honey

1/4 cup fresh lemon juice

Zest of 1 lemon

1 1/2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)

1/2 teaspoon cinnamon

Pinch of salt

1/4 cup water

Prepare the Figs: Begin by washing the figs thoroughly. Trim off the stems and cut them into quarters. Set aside in a large mixing bowl.

    Create the Jam Mixture: In a large heavy-bottomed pot, combine the quartered figs, sugar, honey, and lemon juice. Stir gently to coat the figs in the sweet mixture. Allow it to sit for about 30 minutes; this will help draw out the natural juices of the figs.

      Add Flavor: After resting, add the lemon zest, thyme, cinnamon, and a pinch of salt to the pot. Pour in the water and mix to combine all ingredients.

        Cook the Jam: Place the pot over medium heat and bring the mixture to a gentle boil. Once boiling, reduce the heat to medium-low and continue to simmer, stirring occasionally. Cook for about 45-60 minutes, or until the mixture thickens and reaches your desired jam consistency. You can use a potato masher to break down the figs further if you like a smoother texture.
