Ingredients

1 large sweet potato (about 1 cup mashed)

1 cup all-purpose flour (or whole wheat flour for a healthier option)

1/2 cup cornmeal

2 teaspoons baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon smoked paprika (optional)

1 cup buttermilk (or substitute with plant-based milk + 1 tablespoon vinegar)

2 large eggs

3 tablespoons melted butter (or olive oil for a dairy-free option)

1/4 cup green onions, chopped

1/4 cup shredded cheddar cheese (optional)

Sour cream or yogurt, for serving (optional)

Fresh herbs, for garnish (such as cilantro or parsley)

Instructions

Prepare the Sweet Potato:

    - Preheat your oven to 400°F (200°C). Pierce the sweet potato several times with a fork and bake it on a lined baking sheet for about 45 minutes, or until soft. Let it cool slightly, then scoop out the flesh and mash until smooth. You should have about 1 cup of mashed sweet potato.

      Mix Dry Ingredients:

        - In a large bowl, whisk together the flour, cornmeal, baking powder, baking soda, salt, black pepper, and smoked paprika until well combined.

          Combine Wet Ingredients:

            - In another bowl, whisk together the buttermilk, eggs, and melted butter until smooth. Fold in the mashed sweet potato and chopped green onions (and shredded cheese, if using).

              Combine Both Mixtures:

                - Pour the wet mixture into the dry ingredients and stir until just combined. Be careful not to overmix; some lumps are okay.

                  Preheat the Waffle Maker:

                    - Preheat your waffle maker according to the manufacturer's instructions. Lightly grease it with cooking spray or a bit of oil.

                      Cook the Waffles:

                        - Pour the appropriate amount of batter onto the hot waffle maker (about 1/2 to 3/4 cup, depending on the size of your waffle maker). Close the lid and cook until the waffles are golden brown and crisp. This usually takes about 5-7 minutes.

                          Serve Hot:

                            - Carefully remove the waffles and serve immediately with a dollop of sour cream or yogurt and a sprinkle of fresh herbs, if desired. Enjoy them as a delicious breakfast or savory snack!
