1 lb ground turkey

2 medium sweet potatoes, peeled and diced into small cubes

1 small onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 cup spinach, chopped

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon dried oregano

Salt and black pepper, to taste

2 tablespoons olive oil

1/4 cup chicken or vegetable broth

Optional toppings: fresh parsley, avocado slices, or a dollop of Greek yogurt

Instructions
 

Prep the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season them with salt and pepper. Sauté for about 10-12 minutes, stirring occasionally, until they are fork-tender and lightly browned. Remove the sweet potatoes from the skillet and set them aside.

    Cook the Turkey: In the same skillet, add another tablespoon of olive oil if needed. Add the diced onion and cook for 3-4 minutes until softened. Then, add the minced garlic and diced red bell pepper and cook for an additional 2 minutes.

      Add Ground Turkey: Increase the heat to medium-high, adding the ground turkey to the skillet. Use a spatula to break it apart and cook until it’s browned and cooked through, about 5-7 minutes.

        Season the Mixture: Stir in the smoked paprika, ground cumin, and dried oregano. Mix well and season with salt and black pepper to taste.

          Combine Ingredients: Return the cooked sweet potatoes to the skillet. Add the chopped spinach and pour in the chicken or vegetable broth. Stir everything together and let it cook for another 3-4 minutes until the spinach is wilted and everything is heated through.
