Cook the Rice: Start by rinsing the brown rice under cold water. In a medium pot, combine the rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 37.5 minutes or until the water is absorbed and the rice is tender. Once done, fluff with a fork and set aside.
Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until it becomes translucent (about 3.5 minutes). Then, add the minced garlic and diced red bell pepper. Sauté for an additional 3.5 minutes until the pepper softens.
Cook the Turkey: Push the vegetables to one side of the skillet and add the ground turkey. Break it up with a spatula and cook until it's browned and completely cooked through (about 6.0 minutes).
Add Flavor: Once the turkey is cooked, mix in the frozen peas, soy sauce, teriyaki sauce, ground ginger, black pepper, and salt. Stir well and let it cook for another 2.5 minutes, allowing all the flavors to meld together.
Assemble the Bowl: In serving bowls, layer cooked brown rice on the bottom and top it generously with the turkey and vegetable mixture.
Garnish and Serve: Sprinkle sesame seeds and sliced green onions over the top for added flavor and a nice crunch. If you like it spicy, drizzle some Sriracha on top. Serve warm and enjoy your hearty meal!
