Ingredients
  

1 lb ground turkey

1 medium onion, chopped

2 cloves garlic, minced

2 medium carrots, diced

2 stalks celery, diced

1 cup uncooked brown rice

6 cups low-sodium chicken broth

1 can (14.5 oz) diced tomatoes, with juices

1 tsp dried thyme

1 tsp dried oregano

1 bay leaf

Salt and pepper to taste

1 tbsp olive oil

2 cups fresh spinach, roughly chopped

Juice of 1 lemon (optional)

Fresh parsley for garnish

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, garlic, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are tender and the onions are translucent.

    Increase the heat to medium-high and add the ground turkey to the pot. Cook, stirring frequently, for about 6-8 minutes or until the turkey is browned and cooked through. Season with salt and pepper.

      Stir in the uncooked brown rice, diced tomatoes (with juices), chicken broth, thyme, oregano, and bay leaf. Bring the mixture to a boil.

        Once boiling, reduce the heat to low, cover, and let the soup simmer for about 40-45 minutes, or until the rice is tender. Stir occasionally and check the consistency; if necessary, add more broth or water.

          In the final 5 minutes of cooking, add the chopped spinach and simmer until wilted.

            Taste the soup and adjust seasoning with additional salt and pepper, if needed. If you like a bit of brightness, stir in the juice of one lemon right before serving.

              Remove the bay leaf and ladle the soup into bowls. Garnish with fresh parsley before serving.
