1 cup green or brown lentils, rinsed

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 medium zucchini, diced

1 bell pepper (any color), chopped

1 can (14.5 oz) diced tomatoes, with juices

4 cups vegetable broth

2 teaspoons dried thyme

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

2 cups fresh spinach (optional)

Juice of 1 lemon (optional)

Fresh parsley, chopped for garnish

Prepare the Lentils: Start by rinsing the lentils under cold water in a fine-mesh strainer and set aside.

    Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3 minutes until translucent. Then, add minced garlic and cook for an additional minute until fragrant.

      Add Vegetables: Stir in the diced carrots and celery, cooking for about 4-5 minutes until they start to soften. Next, add the zucchini and bell pepper, cooking for another 3 minutes, stirring occasionally.

        Combine Ingredients: Add the rinsed lentils, diced tomatoes (with their juices), vegetable broth, dried thyme, ground cumin, and smoked paprika to the pot. Season with salt and pepper to taste.

          Simmer the Soup: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 20 minutes, or until the lentils are tender.
