Seafood Alfredo Pasta

8 oz fettuccine pasta

1 cup shrimp (peeled and deveined)

1 cup scallops

1 cup clams (cooked and shelled)

3 tbsp olive oil

4 cloves garlic (minced)

1 cup heavy cream

1 cup grated Parmesan cheese

¼ cup fresh parsley (chopped)

Salt and black pepper (to taste)

1 tsp red pepper flakes (optional)

Juice of 1 lemon

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of the pasta water.

    Sauté Seafood: In a large skillet over medium-high heat, add the olive oil. Once hot, add the shrimp and scallops. Cook for about 2-3 minutes, until both are slightly golden and just cooked through. Stir in the clams and minced garlic, cooking for an additional 1-2 minutes until fragrant. Season with salt, black pepper, and red pepper flakes, if using. Remove from the skillet and set aside.

      Make the Alfredo Sauce: In the same skillet, lower the heat to medium and pour in the heavy cream, stirring continuously. Allow it to simmer gently for about 3-5 minutes until it starts to thicken. Gradually whisk in the grated Parmesan, stirring until melted and smooth. If the sauce is too thick, add in the reserved pasta water a little at a time until you reach the desired consistency.

        Combine Pasta and Sauce: Add the cooked fettuccine to the Alfredo sauce, tossing to coat completely. Then gently fold in the sautéed seafood and chopped parsley, ensuring everything is evenly combined.

          Finish with Lemon: Squeeze fresh lemon juice over the pasta, mix well, and check for seasoning, adjusting salt and pepper as necessary.
