Sheet Pan Hawaiian Chicken

1.5 lbs boneless, skinless chicken thighs

1 cup fresh pineapple chunks

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium red onion, sliced

3 cloves garlic, minced

1/4 cup soy sauce (low sodium)

1/4 cup honey

2 tbsp rice vinegar

1 tbsp olive oil

1 tsp ground ginger

1 tsp sesame oil

Salt and pepper to taste

Optional garnish: chopped green onions, sesame seeds, and lime wedges

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a mixing bowl, whisk together soy sauce, honey, rice vinegar, olive oil, ground ginger, and sesame oil. Add minced garlic and stir until well combined.

      Marinate the Chicken: In a separate bowl, place the chicken thighs and pour half of the marinade over them. Toss to coat the chicken evenly. Allow it to marinate for at least 20 minutes (or up to 2 hours in the fridge for deeper flavor).

        Prepare the Sheet Pan: Line a large sheet pan with parchment paper or lightly grease it with cooking spray.

          Add Vegetables and Pineapple: Spread the sliced bell peppers, red onion, and fresh pineapple chunks evenly on the sheet pan.

            Combine Chicken and Vegetables: Remove the chicken from the marinade (discard the used marinade) and place it on top of the vegetables and pineapple on the sheet pan. Drizzle the remaining marinade over the entire dish.

              Season: Season with salt and pepper to taste.

                Bake: Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.

                  Optional Broil: For a crispy finish, you can broil the sheet pan for an additional 2-3 minutes, watching carefully to prevent burning.

                    Garnish and Serve: Remove from the oven and let it rest for a few minutes. Garnish with chopped green onions, sesame seeds, and lime wedges before serving.
