1 pound large shrimp, peeled and deveined

2 bell peppers (red and yellow), sliced

1 medium onion, sliced

3 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Juice of 1 lime

Fresh cilantro, for garnish

Tortillas, for serving

Optional toppings: avocado, diced tomatoes, sour cream, cheese

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper for easy cleanup.

    Prepare the Shrimp and Vegetables: In a large mixing bowl, combine the shrimp, bell pepper slices, and onion slices.

      Make the Spice Mix: In a small bowl, whisk together the olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, lime juice, salt, and pepper.

        Coat the Ingredients: Pour the spice mixture over the shrimp and vegetables. Toss everything together until the shrimp and veggies are evenly coated in the spice blend.

          Arrange on Sheet Pan: Spread the shrimp and vegetable mixture evenly on the prepared sheet pan in a single layer for even cooking.
