Shrimp and Grits with Cajun Cream

1 cup stone-ground grits

4 cups chicken or vegetable broth

1 cup heavy cream

1 cup shredded sharp cheddar cheese

2 tablespoons butter

Salt and pepper to taste

For the Shrimp:

1 pound large shrimp, peeled and deveined

4 slices of thick-cut bacon, diced

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 green bell pepper, diced

1 teaspoon Cajun seasoning

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (optional, for extra heat)

1/4 teaspoon black pepper

1 cup heavy cream

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Grits:

    - In a large saucepan, bring the chicken or vegetable broth to a boil over medium-high heat.

      - Gradually whisk in the stone-ground grits, reducing heat to low. Cook, stirring frequently, until thickened, about 20-25 minutes.

        - Once the grits have thickened, stir in the heavy cream, shredded cheddar cheese, and butter. Season with salt and pepper to taste, then keep warm.

          Cook the Shrimp:

            - In a large skillet over medium heat, cook the diced bacon until crispy. Remove bacon from the pan and set aside, leaving the rendered fat in the skillet.

              - Add the olive oil to the skillet with the bacon fat. Add the diced onion and green bell pepper, cooking until softened, about 5 minutes. Stir in the garlic and cook for an additional minute until fragrant.

                - Add the shrimp to the skillet and sprinkle with Cajun seasoning, smoked paprika, cayenne pepper, and black pepper. Cook for about 3-5 minutes, stirring occasionally, until the shrimp turn pink and are just cooked through.

                  - Pour in the heavy cream and let it simmer for 2-3 minutes until slightly thickened. Stir the crispy bacon back into the mixture.

                    Combine and Serve:
