1 lb fresh shrimp, peeled and deveined

1/2 cup fresh lime juice (about 4-5 limes)

1 ripe avocado, diced

1 medium cucumber, diced

1 small red onion, finely chopped

1 medium jalapeño, seeded and finely chopped

1/2 cup fresh cilantro, chopped

Salt and pepper to taste

1 tsp olive oil (optional)

Tortilla chips or plantain chips for serving

Instructions
 

Prepare the Shrimp: In a non-reactive bowl, combine the fresh shrimp with lime juice. Ensure the shrimp are fully submerged in the juice, as the acidity will cook the shrimp. Cover and refrigerate for about 30 minutes or until the shrimp turn pink and opaque.

    Combine Ingredients: Once the shrimp are ready, drain off a bit of the lime juice, leaving enough for flavor. Add the diced avocado, cucumber, red onion, jalapeño, and cilantro to the shrimp.

      Season: Drizzle with olive oil (if using), then season with salt and pepper to taste. Gently toss all the ingredients to combine, being careful not to mash the avocado.

        Serve: Chill the ceviche for an additional 10-15 minutes to let the flavors meld. Serve in individual bowls with tortilla chips or plantain chips on the side for dipping.

          Garnish (Optional): Add extra cilantro and diced jalapeño for garnish, or a drizzle of extra lime juice over the top before serving.
