1 cup coconut milk (full-fat for creaminess)

1/4 cup chia seeds

2 tablespoons maple syrup (or honey)

1 teaspoon vanilla extract

1 ripe mango, peeled and diced

1/2 cup granola (store-bought or homemade)

Fresh mint leaves for garnish (optional)

Prepare the Chia Pudding: In a medium mixing bowl, whisk together the coconut milk, chia seeds, maple syrup, and vanilla extract until well combined. Make sure there are no clumps of chia seeds. Let this mixture sit for about 15 minutes, then stir it again to break up any clumps that might form.

    Set the Chia Pudding: Cover the bowl with plastic wrap or a lid and refrigerate for at least 1-2 hours, or ideally overnight. This allows the chia seeds to absorb the coconut milk and swell, creating a silky pudding.

      Prepare the Mango: While the chia pudding sets, peel and dice the mango into small cubes. If you'd like a smoother texture, you can puree half of the mango and leave the other half diced for added texture in the parfait.

        Assemble the Parfait: Once the chia pudding is ready, remove it from the fridge and stir it well. In serving glasses or bowls, start layering the parfait: add a layer of chia pudding, followed by a layer of diced mango (or mango puree), and then a layer of granola. Repeat the layers until the glasses are filled, finishing with a layer of mango and a sprinkle of granola on top.

          Garnish and Serve: Add fresh mint leaves on top for a touch of color and flavor. Serve immediately, or refrigerate for an additional 30 minutes before serving if you'd like it chilled.
