1 large ripe mango, diced

1/2 cup Greek yogurt (or dairy-free alternative)

1/4 cup granola (for topping)

2 tablespoons shredded coconut (toasted, optional)

Instructions
 

Prepare Coconut Chia Pudding:

    - In a medium bowl, whisk together the coconut milk, chia seeds, honey (or maple syrup), and vanilla extract. Stir until well combined.

      - Cover the bowl and let it sit in the refrigerator for at least 2 hours, or overnight, until the chia seeds have absorbed the liquid and the mixture has thickened to a pudding-like consistency.

        Mango Preparation:

          - While the chia pudding is setting, peel and dice the ripe mango into small cubes. Set aside.

            Assembly of the Parfait:

              - Once your chia pudding is ready, take a glass or parfait bowl and start layering the ingredients.

                - Begin by adding a layer of the coconut chia pudding, spreading it evenly at the bottom.

                  - Next, add a layer of Greek yogurt on top of the chia layer.

                      Repeat Layers:
