Ingredients

1 pound beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 ounces mushrooms, sliced (preferably cremini or button)

2 tablespoons all-purpose flour

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 cup sour cream

Salt and pepper, to taste

12 ounces egg noodles

Fresh parsley, chopped (for garnish)

Instructions

Cook the Egg Noodles: Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

Sauté the Beef: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced beef, season with salt and pepper, and cook until browned and just cooked through, about 3-4 minutes. Remove the beef from the skillet and set aside.

Cook the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and sauté for 2-3 minutes until translucent. Add the minced garlic and sliced mushrooms; cook for an additional 5-7 minutes until the mushrooms are soft and golden.

Make the Sauce: Sprinkle the flour over the mushroom mixture, stirring well to incorporate. Cook for 1-2 minutes, then gradually pour in the beef broth, stirring constantly to prevent lumps. Add the Worcestershire sauce and Dijon mustard. Bring the mixture to a gentle simmer.

Combine Everything: Once the sauce has thickened slightly (about 3-4 minutes), reduce the heat to low, and stir in the sour cream until well combined. Add the cooked beef back into the skillet and simmer for another 2-3 minutes, ensuring the beef is heated through.

Serve: Divide the cooked egg noodles among plates, then ladle the beef stroganoff mixture over the top. Garnish with fresh chopped parsley for a pop of color and a hint of freshness.

Enjoy: Serve hot and enjoy your delicious homemade beef stroganoff!
