Simple Beef Tacos with Fresh Salsa

For the Beef Tacos:

1 lb ground beef

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon paprika

Salt and pepper, to taste

8 small corn tortillas

1 cup shredded lettuce

1 cup shredded cheddar cheese

1 avocado, sliced

For the Fresh Salsa:

2 medium ripe tomatoes, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced (optional)

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

Prepare the Salsa: In a medium bowl, combine the diced tomatoes, chopped red onion, minced jalapeño (if using), and chopped cilantro. Squeeze in the lime juice, season with salt, and mix well. Let the salsa sit for about 10 minutes to allow the flavors to meld.

    Cook the Beef: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 2-3 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

      Season the Meat: Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary. Stir in the cumin, chili powder, paprika, salt, and pepper. Cook for another 1-2 minutes to combine the flavors well.

        Warm the Tortillas: While the beef is cooking, wrap the corn tortillas in aluminum foil and place them in a preheated oven at 350°F (175°C) for about 10 minutes or until warmed through. Alternatively, you can warm them on the skillet for a few seconds on each side.

          Assemble the Tacos: Take a warm tortilla and spoon some of the seasoned beef into the center. Top with shredded lettuce, cheddar cheese, and avocado slices. Add a generous spoonful of the fresh salsa on top.

            Serve & Enjoy: Serve the tacos immediately while they’re warm along with extra lime wedges and any remaining salsa on the side.
