4 large eggs

1 cup cottage cheese (low-fat or full-fat, based on preference)

2 tablespoons mayonnaise (optional for extra creaminess)

1 tablespoon Dijon mustard

2 green onions, finely chopped

1 celery stalk, finely diced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Salt and pepper to taste

Lettuce leaves or whole grain bread for serving

Boil the Eggs: Place the eggs in a saucepan and cover them with water. Bring to a boil over medium-high heat, then reduce the heat and let them simmer for 9-12 minutes, depending on how firm you like your yolks. Once done, transfer the eggs to an ice bath to cool for about 5 minutes.

    Prepare Filling: While the eggs are cooling, in a large mixing bowl, combine the cottage cheese, mayonnaise (if using), Dijon mustard, chopped green onions, diced celery, and fresh dill. Stir well to mix all the ingredients together.
