1 1/2 cups uncooked jasmine rice

3 cups vegetable broth (or chicken broth)

3 cups fresh broccoli florets

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 small onion, finely chopped

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/4 teaspoon red pepper flakes (optional)

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Ingredients: Rinse the jasmine rice under cold water until the water runs clear. Set it aside. Chop the broccoli florets, onion, and garlic.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Cook the Rice: Add the rinsed rice to the skillet, stirring to coat it with the oil and aromatics. Pour in the vegetable or chicken broth. Season with onion powder, garlic powder, smoked paprika, red pepper flakes (if using), salt, and pepper. Bring the mixture to a simmer.

        Add Broccoli: Once the broth is simmering, add the fresh broccoli florets. Stir gently to incorporate. Cover the skillet with a lid and reduce the heat to low. Cook for about 15-20 minutes, or until the rice is tender and has absorbed most of the liquid.

          Add the Cheese: Once the rice and broccoli are cooked, remove the skillet from heat. Stir in the sharp cheddar cheese, mozzarella cheese, and half of the grated Parmesan cheese until melted and fully combined. Taste and adjust seasoning if needed.
