1 lb boneless, skinless chicken breasts, sliced into thin strips

1 tablespoon olive oil

1 onion, sliced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

Juice of 1 lime

Tortillas (flour or corn)

1 ripe avocado, sliced

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Prepare the Chicken: In a large mixing bowl, combine the sliced chicken, olive oil, chili powder, cumin, smoked paprika, salt, and black pepper. Toss to coat the chicken evenly with the spices. Let it marinate for at least 15 minutes (or you can refrigerate it for up to 2 hours for more flavor).

    Cook the Vegetables: Heat a large skillet over medium-high heat. Add a splash of olive oil and then add the sliced onion and both bell peppers to the skillet. Sauté for about 5-7 minutes until the vegetables are tender and slightly charred. Remove from the skillet and set aside.

      Cook the Chicken: In the same skillet, add the marinated chicken. Cook for 6-8 minutes, stirring occasionally, until the chicken is cooked through and browned. Add the minced garlic during the last minute of cooking to allow it to become fragrant but not burnt.

        Combine Ingredients: Once the chicken is cooked, return the sautéed vegetables to the skillet. Squeeze lime juice over the mixture, stir to combine, and let everything cook together for another 2 minutes. Taste and adjust seasoning if needed.
