Slow Cooked BBQ Chicken Sliders

2 lbs boneless, skinless chicken thighs

1 cup BBQ sauce (your favorite brand or homemade)

1/4 cup apple cider vinegar

1 tbsp brown sugar

1 tsp smoked paprika

1 tsp garlic powder

1 tsp onion powder

1/2 tsp salt

1/2 tsp black pepper

12 slider buns

1 cup coleslaw (store-bought or homemade)

Pickles (optional, for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Rinse the chicken thighs under cold water and pat them dry with a paper towel. Trim any excess fat if necessary.

    Make the Marinade: In a mixing bowl, combine the BBQ sauce, apple cider vinegar, brown sugar, smoked paprika, garlic powder, onion powder, salt, and pepper. Stir well until all ingredients are combined.

      Slow Cook the Chicken: Place the chicken thighs in the slow cooker and pour the marinade over them, making sure each piece is thoroughly coated. Cover the slow cooker with its lid. Cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easy to shred.

        Shred the Chicken: Once cooked, use two forks to shred the chicken inside the slow cooker, stirring well to mix it with the sauce.

          Prepare the Sliders: Cut the slider buns in half. If desired, toast the inside of the buns on a skillet or in an oven to get them slightly crispy.

            Assemble the Sliders: Scoop a generous portion of the BBQ chicken onto the bottom half of each slider bun. Top with a spoonful of coleslaw for crunch and flavor. Add pickles if you like.

              Serve: Place the top half of the buns over the fillings, secure with a toothpick if necessary, and garnish with chopped parsley for a fresh touch. Serve immediately and enjoy!
