Slow Cooker Balsamic Beef Stew

2 lbs beef chuck, cut into 1-inch cubes

1 cup balsamic vinegar

4 cups beef broth

1 medium onion, diced

4 cloves garlic, minced

3 carrots, sliced

2 stalks celery, sliced

1 cup baby potatoes, halved

2 tbsp tomato paste

2 tsp dried thyme

1 tsp dried rosemary

1 bay leaf

Salt and pepper to taste

1 tbsp olive oil

Optional garnish: fresh parsley, chopped

Sear the Beef: In a large skillet over medium-high heat, add the olive oil. When hot, add the beef cubes in batches, searing until browned on all sides (about 4-5 minutes). Transfer to the slow cooker.

    Combine Ingredients: To the slow cooker containing the beef, add the balsamic vinegar, beef broth, diced onion, minced garlic, sliced carrots, sliced celery, halved baby potatoes, tomato paste, thyme, rosemary, bay leaf, salt, and pepper.

      Mix and Cover: Stir well to combine all ingredients. Cover the slow cooker with the lid.

        Cook: Set your slow cooker to low and cook for 8-10 hours, or on high for 4-5 hours, until the beef is tender and the flavors have melded together beautifully.

          Final Touches: Once cooked, remove the bay leaf. Taste and adjust seasoning if necessary. If you desire a thicker stew, you can whisk a tablespoon of cornstarch in a little cold water and stir it into the stew, then let it cook for another 15 minutes.
