Slow Cooker Charcuterie Board Chili

Ingredients
  

1 pound ground beef or turkey

1 cup diced onions

1 cup diced bell peppers (mix of colors)

2 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 cup beef or vegetable broth

2 tablespoons chili powder

1 tablespoon smoked paprika

1 teaspoon cumin

1 teaspoon oregano

Salt and pepper to taste

1 cup assorted charcuterie elements:

1 small package of sliced salami

1 small package of prosciutto

1 cup grated cheddar cheese

1 cup crumbled feta cheese

1 cup chopped olives (green and black)

½ cup sliced green onions for garnish

Optional toppings: sour cream, avocado, fresh cilantro, tortilla chips

Instructions
 

Brown the Meat: In a skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat and transfer the meat to the slow cooker.

    Sauté the Vegetables: In the same skillet, add a little olive oil and sauté the onions and bell peppers until they’re soft, about 5 minutes. Add minced garlic and sauté for an additional minute. Transfer to the slow cooker.

      Add Ingredients: In the slow cooker, combine the crushed tomatoes, black beans, kidney beans, beef or vegetable broth, chili powder, smoked paprika, cumin, oregano, salt, and pepper. Mix thoroughly.

        Cook the Chili: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the flavors meld and the chili thickens.

          Prepare the Charcuterie Toppings: About 30 minutes before serving, prepare your charcuterie additions. Slice salami and prosciutto, and arrange them on a platter along with the cheeses, olives, and chopped green onions.

            Serve: When the chili is done, ladle it into bowls and top generously with your charcuterie board elements. Offer additional toppings such as sour cream, diced avocado, and fresh cilantro. Serve with tortilla chips on the side for dipping.
