Ingredients

3 pounds russet potatoes, peeled and cubed

1 cup chicken or vegetable broth

1 cup heavy cream

1 stick (½ cup) unsalted butter, cut into pieces

4 cloves garlic, minced (optional)

Salt and pepper to taste

½ cup sour cream (optional for extra creaminess)

Fresh chives or parsley for garnish

Instructions

Prepare the Potatoes: Start by peeling and cubing the russet potatoes into roughly 2-inch pieces for even cooking.

Add to Slow Cooker: Place the cubed potatoes in your slow cooker. Add the minced garlic (if using) and pour in the chicken or vegetable broth. Stir to combine.

Cook on Low: Cover and cook on the low setting for 6-7 hours or on high for 3-4 hours, until the potatoes are fork-tender.

Drain and Mash: Once the potatoes are cooked, drain any excess broth. Use a potato masher or a hand mixer to mash the potatoes right in the slow cooker.

Add Cream and Butter: Gradually add in the heavy cream and butter pieces while mashing until the desired consistency is achieved. If you like your potatoes creamy, you can fold in the sour cream at this stage.

Season to Taste: Season with salt and pepper to your preference. Blend well until the potatoes are fluffy and smooth.

Serve and Garnish: Transfer the mashed potatoes to a serving dish. Garnish with fresh chives or parsley and an extra pat of butter on top if desired.
