Slow Cooker Neapolitan Chili

1 lb ground beef (or turkey for a lighter version)

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

2 medium carrots, diced

2 stalks celery, diced

1 can (28 oz) crushed tomatoes

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) cannellini beans, drained and rinsed

2 tbsp tomato paste

2 cups beef broth (or vegetable broth)

2 tbsp olive oil

2 tsp dried oregano

2 tsp dried basil

1 tsp dried thyme

1 tsp smoked paprika

1 tsp red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh basil for garnish

Grated Parmesan cheese for serving (optional)

Instructions
 

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion, garlic, red and green bell peppers, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened and the onion is translucent.

    Brown the Meat: Push the sautéed vegetables to the side of the skillet and add the ground beef. Cook until browned and no longer pink, breaking it apart with a spoon, about 5-6 minutes. Season with salt and pepper. Drain any excess fat.

      Combine Ingredients: Transfer the meat and vegetable mixture to your slow cooker. Add the crushed tomatoes, kidney beans, cannellini beans, tomato paste, beef broth, oregano, basil, thyme, smoked paprika, and red pepper flakes. Stir well to combine all the ingredients.

        Cook Low and Slow: Cover the slow cooker and set it to low heat for 6-8 hours or high heat for 3-4 hours. Stir occasionally if possible to ensure even cooking and flavors meld together.

          Taste and Adjust: About 30 minutes before serving, taste the chili and adjust seasoning with additional salt, pepper, or red pepper flakes according to your preference.

            Serve: Ladle the Neapolitan chili into bowls, garnish with fresh basil and grated Parmesan cheese if desired. Enjoy with crusty bread or over rice for a complete meal.
