2 cups cooked shredded chicken (rotisserie works great)

1 cup cooked rice (white or brown)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (frozen or canned)

1 cup diced tomatoes (canned or fresh)

1 teaspoon cumin

1 teaspoon chili powder

1 teaspoon garlic powder

Salt and pepper to taste

8 large flour tortillas

2 cups shredded cheddar cheese

1 cup sour cream

1 cup enchilada sauce (store-bought or homemade)

Fresh cilantro for garnish (optional)

Jalapeños for topping (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a large mixing bowl, combine the shredded chicken, cooked rice, black beans, corn, diced tomatoes, cumin, chili powder, garlic powder, salt, and pepper. Mix until well combined.

      Assemble the Burritos: Lay a tortilla flat on a clean surface. Spoon about 1/3 cup of the chicken filling onto the center of the tortilla. Sprinkle a portion of shredded cheddar cheese on top. Fold in the sides and roll up tightly from the bottom to form a burrito. Repeat this process until all filling is used. You should have 8 burritos.

        Prepare for Baking: Place the rolled burritos seam-side down in a greased 9x13 inch baking dish.

          Add Sauce and Cheese: Pour the enchilada sauce evenly over the burritos, ensuring they are well coated. Sprinkle the remaining shredded cheddar cheese on top.

            Bake the Burritos: Cover the dish with aluminum foil (shiny side down) and bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10 minutes until the cheese is bubbly and slightly golden.

              Serve: Remove from the oven and let cool for a few minutes. Drizzle sour cream on top, garnish with fresh cilantro and jalapeños if desired, and enjoy!
